Today a friend and I took a class on Spiralizing (go look it up!). Basically,
Spiralizing is a cooking concept where you take veggies (butternut squash, sweet potatoes, zucchini, etc) and run them through this machine that makes long skinny noodles out of them. These veggie noodles can be used in place of regular noodles in a variety of recipes. The end result is gluten free, vegan, and a heck of a lot less calories than regular pasta. It was an awesome class and I can’t wait to try out some of the recipes. Here’s a picture of our sweet potato noodles cooking away
